Hi, I have built very similar system with what you are going to build(except for sensor list): 1. MCU based on ESP8266(I use NodeMCU) 2. use REST API(I use GET). But no problem, I'm familiar with POST too, as recently I used POST mostly 3. I use JSON as data exchange format. I have been dealing with firmware programming since 2012, and extensively using ESP8266 and ESP32 in recent years. This is my daily job. Let me know if you have another thing to be discussed with me. Hello! I'm an electrical and software engineer with experience in microcontrollers including Arduino and the ESP8266, and various sensor technologies. I'd be happy to discuss some options for the project with you. Since we are both based in Australia, I would be happy to assemble and send you a device if you can cover the cost of parts. I can do this using pre-existing sensor modules (sourced from Adafruit or similar aussie distributors), or raw chips if you prefer (I have the equipment to do through-hole soldering but not very fine surface mount). If you need multiple of these modules I am able to design a PCB/Shield for the HUZZAH module containing all of the required sensors.
