JQuery & Datatables script - edit certain fields and save to DB

We are using this jquery script to allow a table of data to be sorted/searched. [url removed, login to view]
Currently we are using the plugin jEditable to allow the table to be editted. We would however like to limit the editting to one column and also get the script to update the database.
