Secure mysql insert and update script

I need a secure insert and update script for a jobs database.
Below is how the script is now and I a secure script to insert data into the database especial the JobDesc as this is were people would place all kinds of characters in a jobs description ad and I do not want them to get error or.. "can not insert" errors.
Also I would to have this within an hour or so.
