Add Subcategories to our Shopify Store

In Shopify we have many categories of classes we would like to break them into subctegories as indicated below. Currently the products aren't tagged to assist so I will need to go in and mark each class under the appropriate category. I need someone to create and display these subcategories under each collection AND give me information on what I need to do to each product to make it appear under the correct one (keyword, tag, or something else).

We need this done by tomorrow as we have a client meeting. Quick I know but I can pay the milestones starting today.
