I have much experience with embedded controls and sensors. Interfacing the sensor to the controller will be simple. For the wireless power, do you mean the sensor or the entire system? Or do you envision the sensor as a stand-alone module with it's own MCU operating on wireless power and communicating wireless as well? If so, then the cost and time will increase a bit. I would likely use an ESP8266 as the MCU for the sensor module, but I would have to verify the final power consumption.
