I have over 35 years experience as an electronic design and PCB engineer, please see my profile for more details I believe I could help with the PCB design and manufacture but not the case or the software. I have recently designed several Blue tooth products using Nordic and TI devices NRF 8001, NR51822, NRF52832, CC2541, CC2564 and the Laird BL600 and MDBT40 hybrids. Most of these used external Flash storage. I designed 3 separate ECG devices now including one wristband device that also measured oxygen levels.
