In case your printing process is in text/plain format then we could do the interception. Otherwise hard to do. Or if your POS is in Windows based platform, I could do the interception over Printer Job. Let me know which one do you have?

Would the communication with your program be wifi, usb, Ethernet, ...? Is the program separate from the POS host? Is this a small lot project where it just needs to work, or is there a beauty aspect to the HW? Is there any other specific requirement? Propose a beagle bone enhanced from SanCloud with usb in and out and an Ethernet port. Any other ports would require additional scope and a cape plus drivers. Connection to printer learns printer parameters then spoofs it to host POS. Captures commands in EPSON POS, sends to you, you return footer, then it appends footer to commands and sends to printer...
