I was just reading your requirements, I initially I thought of a Raspberry Pi as start, but as you prefer to work in C/C++ it would be preferred to use Atmel family having separate controller for display, or would act as slave MCU that gets controlled via the master controller that performs the functions of the main device. Very good example is the medical patient monitor where it has separate unit for display control, a main unit for main control and sub-units for sensors.
