Wordpress SEO project

I am working on a Jokes site. I am using Wordpress as a platform for the site. My Jokes website has several Categories separating typed out jokes. I also have a funny images area as well. I have not yet launched the website to the public.. I still have some fine tuning here and there with it. I am looking for help with SEO for this site. I know a very little bit about SEO, but no where near on how to take it to the next level. My Goal is to launch the site in 2 weeks. I have done the common SEO practices that need to be tweaked. Listed below is what I have done. Installed Plugins SEO Friendly Images and WordPress SEO. I know I am falling short on using the full potential of Wordpress SEO plugin. When I search for Jokes in the Google Keyword took or anything close to that. It says LOW COMPETITION. So I will need help with Keyword usage in the site. I have created, Google Plus, Facebook Page, Twitter account, Google Analytics. After the SEO has been performed. I would like a summary of how I should continue the good SEO habits that you setup in place. For example. Placing Alt Tags in Images and so on.
